spicy curry

[I received a hand-me-down digital camera from my mom, so now I can contribute all my own photos!]

For Christmas, I got a green enameled Tramonita Dutch oven! Cook’s Illustrated recommended it, saying that the La Crusset dutch ovens that I have lusted after in store windows are hardly worth the price when this little jewel works just as well! Thanks Santa!

To try out my new “toy,” I made up a spicy coconut curry with what we had lying around the kitchen. Red potatoes, carrots, onion, cauliflower, fresh ginger, coconut milk, tomatoes, garbanzo beans and cilantro. I used a hot chili sauce called Sriracha, that you can find at any Asian market, to raise the heat. Served over basmati rice with some fresh cilantro – wonderful!
